Ingredients
  • 450 grams baby potatoes
  • 1 lemon zest and juice
  • fresh parsley handful, finely chopped
  • fresh mint handful, finely chopped
  • fresh chives
  • 60 grams plain Greek yoghurt (4 tbsp)
Servings: as a side

Instructions
  1. Cut the baby potatoes into quarters and boil for around 20 minutes, until soft but not mushy. Once cooked set aside to cool.
  2. Once cooled, add in the rest of the ingredients, then mix well. Season with salt and pepper to taste. Serve as a side.
