Ingredients
  • 100 grams frozen green peas
  • 50 grams firm tofu
  • 1/4 avocado seed & skin removed
  • fresh mint small handful
  • 1 tbsp olive oil
  • lemons juice of (about 1 tbsp)

Instructions
  1. Cover the frozen peas with boiling water and wait a few minutes until defrosted, then drain and transfer into a blender.
  2. Crumble the tofu and add into the peas alongside the avocado, mint, olive oil, and lemon juice. Finally season to taste with salt and pepper. Blitz everything until a paste has formed.
  3. If necessary add some more mint and lemon to adjust taste. Serve with toast or sliced fresh fruit and veg to dip (not included in nutrition info).
