Spiced Pumpkin Oatmeal
Great for a meal prep and can be reheated in the microwave with a splash of milk, or water.

Ingredients
  • 100grams rolled oats
  • 3cups water
  • 225grams pumpkin puree
  • 6grams ground cinnamon(1 tsp)
  • 2grams ground nutmeg(1/4 tsp)
  • 2grams ground cloves(1/4 tsp)
  • 1tsp pure vanilla extract
  • 1 applepeeled and grated finely
  • 2tbsp honey
  • 30grams pumpkin seeds
Instructions
  1. In a medium pot, combine the oats, water, pumpkin puree, ground cinnamon, nutmeg, cloves, vanilla extract and grated apple.
  2. Cover and bring to a boil, then reduce heat, and simmer for around 20 mins, stirring frequently, until cooked through.
  3. Stir in the honey, allow to cool, and portion out into 4 bowls or containers. Top with pumpkin seeds.
