  • 3 eggs
  • 200 grams coconut sugar
  • 225 grams shredded coconut unsweetened
  • 26 grams crystallized ginger, finely chopped
  • 1 red chili pepper 1 tsp or more or less to your preference, finely chopped

Instructions
  1. Preheat the oven to 180C
  2. Meanwhile, use a hand mixer to beat the eggs with the sugar until thick, white and airy. This takes about 4 minutes. Mix the shredded coconut, ginger and chilli pepper through.
  3. Using the ice cream scoop, scoop the balls of the mixture and place on a baking sheet covered with parchment paper.
  4. Bake in the oven for about 20 min until golden brown.
