While not round and technically not a pie, this is a delicious and nutritious snack, high in protein. Feel free to swap out the vegetables for anything you might have in the fridge, for example spinach, sliver beat, baby rocket leaves or red pepper. It is a generous serving for 4 or will serve 8 with a side salad. Stores well for a few days in the fridge as well.

Perfect meal for anytime of the day and you want a vegetarian version just omit the bacon. Great dish to prepare ahead of time as well.

Ingredients
  • 1 tbsp coconut oil
  • 10 eggs
  • 6 bacon rashers
  • 100 grams Parmesan cheese
  • 1/2 red onion
  • 2 garlic cloves
  • 3-4 kale leaves
  • 1/4 head red cabbage
  • 200 grams green beans

Instructions
  1. Preheat your oven to 180 degrees Celsius
  2. Gently heat the oil over medium heat in a large frying pan, cook the garlic and onions for 3-5 minutes.
  3. Add the chopped bacon to the onion and garlic and cook for about another 7-10 minutes.
  4. While the bacon is cooking trim and cut the green beans, kale and cabbage.
  5. Add the kale to the bacon mixture and cook for a further 3- 5 minutes.
  6. Once it cooked and to a glass pyrex dish approximately 18cm x 23 cm
  7. Layer on the top of the bacon mixture the green beans and red cabbage.
  8. Whisk the eggs, then stir in the parmesan cheese, pour the egg mixture over the bacon and cabbage.
  9. Give your dish a little shake so the egg mixture covers the bacon and cabbage mixture
  10. Cook in the over for 40-45 minutes.
  11. Allow to cool a little before serving.
