Ingredients
  • 1 tbsp coconut oil
  • 750 grams chicken thigh
  • 1 onion diced
  • 3 garlic cloves minced
  • 250 grams mushrooms
  • 6 grams dried oregano 1 tsp
  • 6 grams dried rosemary 1 tsp
  • 100 ml chicken broth/stock
  • 200 ml coconut cream
  • fresh parsley handful roughly chopped
  • salt
  • pepper

  • 750 grams chicken thigh

  • 200 ml coconut cream

Instructions
  1. Heat the coconut oil in a large pan.
  2. Season the chicken thighs with salt and pepper, then sear the chicken thighs until browned (about 5 mins each side). Once browned transfer onto a plate and cover to keep warm.
  3. To the same pan, add the onion and garlic and sauté for 5 mins. Next add in the mushrooms and cook for another 3 mins.
  4. Add in the spices and season with salt and pepper to taste, return the chicken to the pan.
  5. Pour in the chicken stock and mix well. Next add in the coconut milk, reduce the heat and leave to simmer for 15 mins.
  6. Taste for seasoning, sprinkle fresh parsley and serve.
